The Pasta Few Days, I've Been Craving Pesto!

1 box whole grain pasta 

1 ball of fresh mozzarella 

1 12 oz. jar of roasted red peppers 

2 cups of fresh arugula 

3/4 cups of homemade pesto 


Pesto ingredients: 


2 cups of fresh basil

1/2 cup parmesan cheese 

1/3 cup pine nuts 

2-3 cloves of miced garlic 

1/2 cup extra-virgin olive oil 

salt and pepper to taste


There is something so savory about a fresh homemade pesto, I can't quite put my finger on it (as I am dipping my fingers in the recipe to taste test). In the meantime, I will occupy myself by indulging in a mammoth serving of this refreshing pesto pasta salad. Thank goodness it's loaded with whole grains and healthy fats! :-) 


Don't mind the toddler helping himself to some pine nuts. He gets his strong attraction to food from his mother LOL. The pasta in this photo is boiled until al dente, then rinsed with cold water. 

Mince the garlic and toss all of the ingredients into your food processor. 


If you are a foodie like me, you are currently processing how delicious this pesto is looking. Hello beautiful!!!! 

 Cube your mozzarella, or triangle and rectangle it?! 


Chop roasted red peppers, and toss them into a large bowl with your cooked pasta, fresh mozzarella, and arugula. Next comes the icing on the salad? ;-) 


 Add your savory homemade pesto, mix everything together, take an extra big bite, and enjoy!
