I'm Really Peeling this Banana Bread!

I always have a fresh bundle of organic bananas sitting on my kitchen table. Bananas are one of my favorite grab and go snacks. This week they over ripened extra fast and since I am never a fan of wasting food, this bread recipe was a perfect way to utilize the browning fruit.   



2-3 peeled ripe bananas 

1/2 cup melted butter 

1/2 cup brown sugar

1 egg, beaten 

1 teaspoon vanilla extract 

1 teaspoon baking soda 

Pinch of salt 

3/4 cup whole wheat flour 

3/4 cup white flour 



 Mash ripe bananas with a fork until completely smooth.  


Add 1/3 cup of melted (organic) butter! MMMMMMMMM

 Get ready to mix in the remainder of your ingredients starting with your sugar, baking soda, salt, beaten egg, and then vanilla extract.

Add your flour and mix, mix, mix! 


Butter a 4x8-inch loaf pan and bake at 350 degrees F for about 50 minutes. Remove from the oven, let  cool, and enjoy!

 A delicious addition to your morning coffee!
