I love a healthy low calorie soup! This recipe is one of my Filipino favorites, light, high in protein, and so tasty.
Nutrition Information per serving (8):
7 g Carb
7 g Fat
34 g protein
2 tablespoons oil
3-4 cloves, garlic, minced
3 inches ginger, peeled and sliced
2 lb. chicken (breast, leg, or thigh)
6 cups water
1 unripe papaya
1 teaspoon salt
Pepper to taste
2 cups spinach
Two pounds of chicken, trimmed, sliced, and ready to cook.
Peel and thinly slice ginger, then add more ginger...and more LOL
Heat oil in a large pan and sauté garlic until lightly brown. Add ginger and chicken, sauté again until lightly brown, then add 6 cups of water and bring to a boil. Reduce to medium heat and simmer for about 20 minutes until the chicken is tender.
Peel and remove seeds from your beautiful unripe papaya.
Cut papaya and add to your pan simmering for another 15 minutes, or until soft. Season with salt and pepper, then mix in 2 cups of fresh spinach.
Garnish with a lemon and serve hot! Enjoy :-)
