Balsamic Quinoa and Cauliflower Salad

Quinoa is one of my favorite grains. I love its nutty flavor, low glycemic index, and the fact that it is a plant based complete protein. This balsamic quinoa salad is an absolutely perfect meatless dish and a must try! 


Nutrition Facts Per Serving: 

381 Kcal 

37 g Carbs

22 g Fat 

13 g Protein

7 g Sugar  


**You can cut additional calories by choosing low fat cheese options, however, I prefer the full fat flavor!**




2 cups cauliflower florets 

1 cup mushrooms 

2 tsp Thyme 

2 cups water 

1 cup quinoa, rinsed  

1 tbsp olive oil 

1/4 cup chopped walnuts 

1/4 cup goat cheese 

1/4 cup balsamic vinaigrette

Salt and pepper to taste


Recipe yields 4 servings 

 Toss veggies in olive oil, 1 tsp minced thyme, salt, and pepper, then roast in oven at 400 degrees F for about 25 minutes. Make sure you mix your veggies half way through the baking process. This smells delicious already! 

 Rinse your grains, bring two cups of water and one cup of quinoa to a boil and reduce the heat. Cover the pan and let the quinoa cook until tender (about 15-20 minutes).

 Let the chopping begin! 

 I love when my kitchen smells like fresh garden picked thyme :-) 

 Mix everything together with 1/4 cup balsamic vinaigrette.
